October Special Recipe - Pumpkin Bread
2 C all-purpose flour
1 C packed brown sugar
1 T baking powder
1 tsp ground cinnamon
¼ tsp salt
¼ tsp baking soda
¼ tsp ground nutmeg
1/8  tsp. ground ginger or ground cloves
1 C Canned pumpkin
½ C milk
2 eggs
1/3 C shortening or canola oil
OPTIONAL: ½ C raisins and/or ½ C chopped walnuts

In a large bowl combine all the dry ingredients.  In a separate bowl combine the pumpkin, milk, eggs and oil.  Beat the wet ingredients with an electric mixer till blended, then on high speed 2 minutes.  Add dry ingredients by the cupful while mixing slowly. Stir in nuts and raisins if you are adding these.
Pour batter into a greased 9x5x3 loaf pan.  Bake in a 350 degree oven for 60-65 minutes or till a toothpick inserted near the center comes out clean.  Cool for 10 minutes on a wire rack, then remove from the pan.

This recipe only makes 1 loaf, so I always double it.
